The storehouses
14°C in every season… 70-80% humidity near the barrels… Domaine de Cala’s three storehouses are a balance of technology and tradition.
The first storehouse is home to a stainless steel tank where our rosés age for 3 to 8 months. The second, with its concrete tanks shaped like tulips for enhanced fermentation, is meant for reds and whites. The final storehouse smells deliciously of wood and contains 500-litre barrels and two huge barrels on stands for reds, with respective capacities of 2,000 and 3,000 litres. This is where white wines age gently, in the traditional way, for 4 to 5 months, and reds for 12 to 15.

HARVEST TIME
It all begins when the fruit has ripened just the right amount. For rosés, the grapes are picked in the cool of the early morning hours (8-10°C), to ensure they hold onto their colour. For reds and whites, the berries are harvested with selective sorting: whole clusters for whites and grape by grape for reds. First by the trunks of the vines and then, ever so delicately, in the cellar. In days of old, they were stomped by foot, but they are now pressed mechanically.

Opening onto the vines and the tanks, the wine shop is the winery’s tasting room and sales floor. Here, the spotlight is on wine, down to the very last detail.
